Can report that Big Sur works great on the 4,1/5,1. Just need a newer GPU ! WiFi card needs to be updated as well.
Best way to do it is run the install on another machine that supports natively. I have done this using a TB enclosure with PCIE drive. There are apps to make this easier. But once installed, all that is required is: sudo nvram boot-args="-no_compat_check" This allows normal function. If you do an NVRAM reset, you will need to reapply.

You can also use Patched Sur and it will work without any extra natively supported machines directly on Mac Pro 4,1/5,1.

Is there any way to upgrade the Nvidia GTX 780 6144mb that I bought from MavVidCards to work on Big Sure. Any help would be greatly appreciated.

It works great under Big Sur. Just follow this guide: https://www.macvidcards.eu/installing-macos-big-sur-11-on-unsupported-mac-pro

Since it is such an important tool for me for video editing, I kept my 5,1 on High Sierra because I didn't want to risk messing it up and also have an nVidia video card.
